Cowboy Cookies

 

Ingredients:

1 cup butter, softened

1 1/2 cups packed dark brown sugar

1 teaspoon honey

3 egg yoks

1 teaspoon almond extract

1 teaspoon pure vanilla extract

1/2 teaspoon whiskey extract (optional)

1/3 cup all-purpose flour

1/3 cup bread flour

2 teaspoons cornstarch

1/2 teaspoon baking soda

1 teaspoon sea salt

3 cups old fashioned oatmeal

1 cup chopped pecans

1 cup dark chocolate chips

Directions:

Preheat your oven to 325.

Cream together butter, and brown sugar until smooth. then stir in honey.

Beat in egg yokes one at a time, then stir in vanilla whiskey, and almond extracts.

Combine flours, baking soda and sea salt, then stir into the creamed mixture until just blended.

Mix in the oats, pecans and chocolate chips.

Drop by heaping spoonfuls onto ungreased baking sheets.

Bake for 12 minutes in the preheated oven.

Allow cookies to cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
