Arugula Blackberry Peach Salad

This is a beautiful delicious summer salad. Yum!

Ingredients:
For the Salad:
5 Oz. arugula
2 cups cooked farro
3 medium ripe peaches, pitted and sliced
1 cup blackberries
1 cup cucumber, diced
1 avocado, chopped
1/2 cup feta or goat cheese
1/2 cup pecans, chopped
1/4 cup red onion, thinly sliced
2 tablespoons mint, chopped
2 tablespoons basil, chopped
For the Dressing:
1/3 cup olive oil, or avocado oil
1 lime, zested
2 tablespoons lime juice
2 tablespoons honey
1 tablespoon red wine vinegar
1 small shallot, minced
1 clove garlic, minced
salt and pepper, to taste
Directions:
For the Salad:
Combine the arugula, cooked farro, peaches, blackberries, cucumber, avocado, cheese, nuts, onion, and herbs.
For the Dressing:
In a small bowl or in a glass jar, whisk together the oil, lime zest, lime juice, honey, red wine vinegar, shallot, garlic, salt, and pepper.
Pour the dressing over the salad and gently toss together until the salad is well coated, then serve. Enjoy!
