Pecan Cheesecake Bars

Pecan pie and cheesecake, recipes mixed for a special treat. Yum!

Ingredients:
For the Crust:
2 cups graham crackers crumbled (about 16 full graham crackers).
1/4 cup sugar
1/2 cup butter, melted
For the Cheesecake:
two 8 Oz. packages of cream cheese, softened
3/4 cup sugar
2 eggs
1 tsp. vanilla
For the Pecan Topping:
1/4 cup butter
1/2 cup heavy cream
1 cup packed light brown sugar
1 tsp. vanilla
1/2 cup light corn syrup
2 cups pecans, chopped
Directions:
Preheat oven to 350, then grease a 13" x 9" dish and cover with parchment paper.
For the Crust:
Put graham crackers to a food processor and process until crumbly.
Add sugar and butter and process again.
Press mixture into the baking dish and set aside.
For the Cheesecake Layer:
Mix together cream cheese, sugar, eggs and vanilla.
Pour over graham cracker crust and spread out, then set aside.
For the Pecan Topping:
Melt butter in a saucepan, on medium heat.
Add heavy cream, vanilla, brown sugar and corn syrup.
Mix together and allow it to come to a boil.
Add pecans and stir until covered.
Pour over cheesecake mixture and spread out.
Bake for about 40 minutes
Cool for an hour before refrigerating.
Refrigerate for four hours so bars set-up before cutting into squares. Enjoy!
