Thai Basil Chicken

This is so delicious and easy, made in less than 30 minutes. Yum!

Ingredients:
2 Tablespoon olive oil
2 shallots, sliced
6 cloves garlic thinly sliced
1 Tablespoon fresh ginger, minced
1/2 bell pepper, sliced
1 pound ground chicken, diced chicken breast or ground turkey
2 teaspoon brown sugar
1 Tablespoon fish sauce (or substitute hoisin sauce)
1/4 cup low-sodium soy sauce
1 Tablespoon oyster sauce
2 Tablespoons Garlic Chili Sauce, to taste
½ cup low-sodium chicken broth
1/4 cup water
1 teaspoon cornstarch
2/3 cup fresh basil leaves
Cooked Jasmine rice, for serving
Directions:
For the Veggies:
In a wok or large skillet over medium high heat, add the oil.
Once hot but not smoking, add shallots, garlic, ginger, bell peppers (and any other veggies) and fry for 3 minutes.
For the Chicken:
Push veggies off to the side.
Turn heat to high and add ground chicken, breaking into small pieces as it cooks.
For the Sauce:
In a small bowl, stir together the brown sugar, fish sauce, soy sauce, chili sauce, oyster sauce, cornstarch, chicken broth, and water then add to the pan, and cook for 3 minutes.
Serve: Add the basil then stir-fry until wilted, then serve over hot cooked rice. Enjoy!
